Russian Salad, also known as Olivier Salad, is a traditional salad that is popular in Russia and many other countries. Here’s how you can make it:

Ingredients:

  • 5 small fresh  potatoes (boiled, peeled, and cubed)
  • 3 medium carrots (boiled and diced)
  • 1 cup of peas (boiled or canned)
  • 4 hard-boiled eggs (chopped)
  • 1 cup of cooked chicken or ham (diced, optional)
  • 1 large cucumber (diced)
  • 3-4 pickled cucumbers (diced)
  • 1 apple (peeled and diced, optional)
  • 1 small onion (finely chopped, optional)
  • 1-1.5 cups of mayonnaise
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients:
    • Boil the potatoes, carrots, and peas until they are tender but not mushy. Let them cool.
    • Peel and dice the potatoes and carrots into small, even cubes.
    • Dice the pickled cucumbers, fresh cucumber, apple (if using), and onion (if using).
    • Chop the hard-boiled eggs.
    • Dice the cooked chicken or ham (if using).
  2. Mix the Ingredients:
    • In a large bowl, combine the diced potatoes, carrots, peas, cucumbers, pickled cucumbers, eggs, apple, onion, and meat (if using).
    • Add the mayonnaise and gently mix until all ingredients are evenly coated.
    • To ensure taste, season with salt and pepper.
  3. Chill and Serve:
    • Keep refrigerate with cover for at least an hour.
    • Serve chilled, garnished with extra pickles, eggs, or herbs if desired.

Tips:

  • You can adjust the ratio of ingredients to your liking, adding more or less of what you prefer.
  • Some versions include diced beets, which give the salad a vibrant pink color.
  • The salad can be served as a side dish or as a light meal on its own.
